Ahi Tuna:
From one of the biggest and highly regulated fisheries of the world, the Hawai'i Pelagic Longline Fishery, our Bigeye Ahi is caught under strict guidelines to minimize by-catch and to ensure the highest quality and sustainable product possible. Bigeye Ahi boasts a more firm texture compared to salmon and hamachi, but can still carry a high oil profile. It tends to carry more oil than Yellowfin Ahi, because it resides in deeper and cooler waters. The firm texture can offer a steak-like appearance and experience when cooked. When consumed as raw, the red flesh can provide a visual asthetic and the firm texture a meatier bite.
New Zealand Ōra King Salmon
Often referrred to as the “Wagyu of the Sea”, with its marbled and striated appearance, the moist texture and rich flavor has earned it the reputation of the worldʻs best salmon for sashimi and sushi.
Curated in the Marlborough Sounds in the crystal clear waters of New Zealand, the aquaculture techniques used to raise the salmon has earned :
- “Best Aquaculture Practices” by the Global Aquaculture Alliance
- “Best Choice” by Monterey Bay Aquarium Seafood Watch
-“Sustainable” by the Vancouver Aquarium Ocean Wise Conservation Program
Hamachi (Yellow Tail)
Responsibly Farmed Raised in the Kagoshima Prefecture of Southern Japan, Hamachi (yellowtail) offers a rich and buttery profile and varying degrees of texture throughout the filet. Hamachi, or Buri (when size exceeds 80 cm) can be eated raw in sashimi, poke or sushi, grilled or even poached. The high oil content allows for a wide variety of preparation techniques and yet maintains a rich profile.
